After the removal of all fat, glands and external blood vessels, the liver is de-membraned and sliced ± 10mm thick, using a Rotary Slicer.

Beef Hearts trimmed of all vessels, blood clots and heavy fat pockets. Either sliced ± 15mm thick or cubed ± 15mm.
